Tomato fry (Tomato Onion Roast)
Sometimes you will have a mental block on what to make – as a side dish for chapathi, paratha, appam etc. Tomato onion roast or tomato fry is an easy and tasty dish you can prepare for the same. With minimum ingredients and just few minutes of cooking, this can save you from the need for any other side dishes. This Tomato fry is prepared in Kerala style and so try it out with Kerala porotta or Malabar porotta. Ingredients
- Ripe tomato – 3 Nos (thin long slices)
- Tomato – 1 No (thin round slices)
- Onion – 3 Nos (thin long slices)
- Ginger garlic paste – 1 tsp
- Garlic – 1 big clove (julienne cuts)
- Ginger – small piece (julienne cuts)
- Green chilli – 1 no (finely chopped)
- Salt – as needed
- Sugar – 1/2 tsp
- Mustard seeds – 1/2 tsp
- Coconut oil – 2 tbsp
- Red chilli powder – 2 tsp
- Turmeric powder – 1/4 tsp
- Fennel powder – 1 tsp
- Curry leaves – 3 sprigs
- Coriander leaves – ½ cup (finely chopped)
Preparation
Add oil to the heated pan, once the oil is hot, add mustard seeds. When mustard seeds start popping add ginger garlic paste and saute for 10 seconds. Now add onion, green chilli, curry leaves and sprinkle some salt. Saute till onion turns translucent, then add red chilli powder, turmeric powder and fennel powder. Saute this for about 30 seconds or till fragrant. Immediately add finely chopped tomatoes, salt and cook till tomatoes turns mushy. Here add sugar, ginger and garlic slices and mix well. Cover and cook for a minute. Now add the round tomato slices into it and mi well in it. Add coriander and curry leaves, over and cook for a minute. Toamto fry is ready. Mix well and serve hot…
