Basanti pulao can be prepared easily and is usually taken as such or with veg or non-veg curries. The best option is to ty it with Bengali mutton curry.
Step 1 :
Ingredients :
- Rice – 1 cup
- Ginger – 1 tbsp (crushed)
- Salt – as needed
- Ghee – 1 tbsp
- Turmeric powder – 1 tsp
- Garam masala powder – ¼ tsp
Soak the rice in water for 1 hour. Drain the water and spread it to dry. Make sure that the rice dry before proceeding. Add ginger, salt, ghee, turmeric powder, garam masala powder. Mix well and keep it for 30mins.
Step 2 :
Ingredients :
- Ghee – 1 tbsp
- Cardamom – 5 to 8 nos
- Cinnamon stick – 1”
- Cloves – 10 nos
- Baby leaf – 1 big (optional)
- Cashew nut – few
- Raisins – few
- Water – 1 cup = 1 ¾ cup water
- Sugar – as needed
In a frying pan, add ghee, cardamom, cinnamon, baby leaf, cloves, cashew nut and raisins. Saute for a while. Add the prepared rice and saute for about 3 to 5 minutes. Add boiling water to the mix and sugar as needed. Mix well, cover and cook over low flame till the rice is done.
Basanti Pulao is ready to be served !!!
