Step 1 – Mughlai mutton stew masala preparation
Ingredients
- Melon seeds – 1 ½ tbsp
- Cashew nuts – 3 tbsp
- Dried red chilli – 4 to 5 nos
- Black pepper corns – 1 tbsp
- Poppy seeds – 1 tbsp
- Onion – 1 no, thin slices
- Oil – 2 tbsp
- Water – about ½ cup
- Salt – ½ tsp
Preparation
Firstly, into a heated pan, add onion and salt. Saute till brown over medium flame. Transfer it to a colander. Grind all the remaining ingredients to a fine paste. To that add the fried onion and grind it to a fine paste and keep aside.
Step 2 – Preparing the Mughlai Mutton Stew
Ingredients
- Ghee/oil – 2 tbsp
- Fennel seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Black cardamom – 2 nos
- Green cardamom – 3 nos
- Star anise – 1 no
- Mace (Javitri) – 1 no
- Bay leaves – 2 nos
- Cinnamon stick – 1 “
- Garlic paste – 1 tsp
- Ginger paste – 1 tbsp
- Onion – 2 nos, thin slices
- Green chilli – 4 to 5 nos, crushed
- Salt – as needed
- Mutton – 850 gms
- Yogurt – 1 cup
- Fresh cream – 3 tbsp
- Kewra water – 1/2 tbsp
- Garam masala powder – 1 tsp
- Coriander powder – 1 tbsp
- Saffron – few strands, in 1/2 tbsp water
- Water – 2 1/2 cups
- Turmeric powder – 1/2 tsp
Preparation
Into the same pan used for frying the onion in step 1, add Ghee or oil. Add cumin and fennel seeds. Upon popping, add the whole spices and saute for 15 seconds. Now add ginger and garlic paste, sauté for 20 seconds. Then add onion, sprinkle a pinch of salt and saute till light brown. Add green chilli, mix well and add coriander powder. Stir for 10 seconds and add turmeric powder, then saute for 10 more seconds or till fragrant. Here, add yogurt, mix well and add the ground paste made in step 1. Mix well and cook till it starts to get separated from the sides of the pan.
Add mutton and salt as needed and mix well. Water is added and then cover and cook for about 35 minutes or till mutton is done well. Stir in between for not to bet burnt. Add more water if required. Once the mutton is cooked well and gravy is thickened, add kewra water, saffron water and cream. Sprinkle garam masala powder and some chopped coriander leaves. Boil for 2 to 3 minutes. The royal Mughlai mutton stew is ready.
