Mexican rice – easy to make vegetarian rice recipe
Step 1
Ingredients
- Cooking oil – 2 tbsp
- Garlic – 1 tbsp (finely chopped)
- Onoin – 2 nos( finely chopped)
- Long rice (basmati rice) – 2 cup (washed and drained )
- Water – 1 .5 to 2 cups of water for 1 cup of rice(use same measuring cup for water and rice)
- Salt – as needed
Preparation
In a heated pan add oil and when its hot, add garlic and onion. Saute till light brown colour. Add rice and fry for few minutes. Fry it till its hard to move the rice in the pan. Add water ( measuring about two cups for one cup of rice ), salt as per taste. Cover and cook over low flame until no water is left in the pan. Rice will be firm but tender.
Step 2
Ingredients
- Cooking oil – 2 tbsp
- Dried red chilli – 3 tbsp(crushed)
- Vegetables – 1 cup( small cuts|capsicum ,carrot, french beans, corn extra…)
- Salt – as per taste
- Tomato – 1 to 2 numbers (finely chopped )
- Black pepper powder – 1/2 tsp
- Spring onion – 2 tbsp
Preparation
In a heated pan, add cooking oil. When its hot, add dried red chilly and saute for a while. Add the chopped vegetables and salt as needed. Saute for few minutes and then add tomatoes. saute till the tomatoes are cooked well. Add the cooked rice and mix gently (toss it if you can). Sprinkle black pepper powder, and garnish with spring onion. If you have any left over rice, it can also be used.
