Layali Lubnan recipe (Lebanese Nights Dessert Recipe) – No-bake easy semolina pudding
Middle East is famous for different dessert recipes and the list is incomplete without considering Layali Lubnan. Lebanese Nights or “Layali Lubnan” is a great Semonlina pudding which can be served with cream or sugar syrup. Layali lubnan is the right Arabic dessert which is quite refreshing in the summertime.
This pudding is soft in nature and can be made in small cups or sliced easily while serving. Traditional garnishing includes dry fruits like pistachios, resins etc. Nowadays variations can be seen with fresh fruit cuts. Its very easy to prepare and can be prepared in advance for the guests.
Step 1
Ingredients for Layali Lubnan
- Milk – 5 cups
- Semolina (Rava) – 1 cup
- Sugar – 1/2 cup
- Rose water – 1 tbsp
- Blossom water – 1 tbsp
Preparation
Boil the milk by adding sugar. When the milk starts to boil, add rose water and blossom water and mix well. Now add semolina into the milk. Cook over low flame till it becomes thick. Stir thoroughly to avoid lumps in it. Immediately transfer the milk – semolina mix into a serving tray and spread evenly. You can also make individual small portions also. Its upto your choice. For that you can use small bowls, small glasses, muffin molds etc.
Step 2 – preparing Astha
Ingredients
- Milk – 2 cups
- lemon juice/vinegar – 2 tbsp
Preparation
Boil the milk. Add lemon juice into the boiling milk. Continue boiling by stirring the milk well. Now the milk starts to curdle. Then drain and separate the cream and the whey. That cream is called Astha.
Step 3 – Making Layali Lubnan
Ingredients
- Milk – 3 cups + ½ cup
- Corn flour – 3 tbsp
- Sugar – 2 to 3 tbsp
- Rose water – 1 tbsp
- Blossom water – 1 tbsp
- Pista (crushed) – 3 tbsp (for garnishing)
- Cashews – few (for garnishing)
Preparation of Layali Lubnan
Boil the milk by adding sugar into it. When the milk starts to boil, add rose water and blossom water and mix well. Mix the corn flour in half cup of cold milk. Add this milk into the boiling milk. Now milk starts to get thicker. Turn off the flame.
Add the prepared astha into it. Mix well. The consistency of the mix should be creamy and spreadable. Spread this on the prepared milk semolina base. Spread evenly. Garnish it with crushed pista and cashews. The tasty Layali Lubanan is ready. Have this hot or cold. Enjoy!!!
