Koottucurry or Koottukari, is special blend of vegetables, coconut, chickpeas etc. This is part of the major feasts in Kerala, which can be easily prepared at home. Being a thick curry, this is even taken as a snack.
STEP 1 :
Ingredients
- Yam – 300g
- Raw Banana (plantain) – 2 nos
- Black chickpeas (soaked overnight) – 100g( ½ cup)
- Black pepper powder – 1 ½ tbsp
- Coconut oil- 1 tbsp
- Salt – as needed
- Water – ¾ cup
Peel and cut yam, raw banana into small cubes. Wash the chopped plantain few times to remove the starch. Into a pressure cooker, first add the black chana and then the chopped vegetables. Add black pepper powder, salt, water and coconut oil. Cover and cook over low flame for 3 to 4 whistles.
STEP 2 :
- Ingredients
- Fresh coconut scraped – 10 tbsp
- Cumin seeds – ½ tsp
- Turmeric powder – ¼ tsp
- Chilli powder – ½ tsp
Now we can prepare the coconut mix. Into a bowl, add scraped coconut, cumin seeds, turmeric powder and chilli powder. Coarse grind by adding little water.
STEP 3 :
Ingredients
- Mustard seeds – ½ tsp
- Urud dal – 1tsp
- Dried red chilli – 2 to 3 nos
- Curry leaves- few
- Coconut oil – 1 to 2 tbsp
- Fresh coconut – 8 tbsp
- Jaggery – 1 tsp
Pour coconut oil onto a pan. When the oil is hot, add mustard seeds. When the mustard seeds start to pop, add urud dal, dried red chilli and a few curry leaves. Saute till dal turns brown in colour. Add the fresh coconut into the mix and saute till golden colour.
Add the cooked vegetables and ground coconut mix. Add jaggery and few curry leaves. Mash and mix slightly. Cover and cook for few minutes till everything is combined well. Finally add coconut oil and mix well.
Koottukari is Ready !!!
