Ingedients

  • Tomato – 1 no (sliced)
  • Egg – 3 nos
  • Coconut – ½ cup (scraped)
  • Mushroom – 1 cup (chopped)
  • Moringa (Drum stick) – 1 big
  • Garlic – 1 clove (big)
  • Virgin coconut oil – 3 tbsp
  • Green chilli – 2 to 3 nos (slit)
  • Salt – as needed
  • Cumin seeds – ¼ tsp
  • Turmeric powder – ¼ tsp
  • Curry leaves – handful

Coarse grind coconut, cumin seeds and garlic. Boil the eggs and cut into four pieces. Add mushroom, tomato, drum stick, green chilli, turmeric powder and salt as needed. Add 4 tbsp of water and mix well. Cover and cook well. Add ground coconut mix. Mix well, cover and cook for 1 minute. Add boiled eggs and mix gently. Turn off the flame, add virgin coconut oil and mix well. To prepare it as a regular dish, reduce the amount of coconut oil to ½ tbsp.
