Garlic chutney (Rajasthani Style)
Chutneys have got a special place in day to day recipes of Indian food. Garlic chutney is preferred by all due to its taste and being healthy in nature. Garlic chutney has different variations in different states of India. Rajasthani Garlic Chutney recipe is one of the special ones. It’s called locally as Rajasthani Lasun ki chutney as well. The special taste makes it an essential side dish for rice, chapathi, thali, dal bhati churma etc.
Ingredients
- Dried Kashmiri Chilli – 15 to 20 nos
- Garlic – 1 bulb (peeled)
- Tomato – 1/2 to 1 no (optional)
- Cumin seeds – 1/4 tsp
- Coriander seeds – 1/2 tsp
- Oil – 1 tbsp
- Salt – as needed
Preparation
Deseed the dried red chillies, soak them for 30 minutes and drain. Grind garlic, chilli, coriander seeds and tomato to a fine paste. Heat a pan and add oil to it. When the oil is hot, add cumin seeds. When seeds start popping, add the ground mix, salt as needed to it. Saute for few minutes till the chutney becomes thick in consistency. You can reduce time if you need a thin consistency. After cooling down, store it in an air-tight container. You can store this for a longer period.
