Chicken fry with green peppercorns and birds eye Chilli ( Pacha kurumulaku Kandhari chicken fry)
Step 1
Ingredients
- Ginger – small piece
- Garlic cloves – 2 nos
- Shallots – 2 nos
- Green peppercorns (pacha kurumulaku) – 1 tbsp
- Birds eye chilli (kanthari)- 20 nos
- Coriander leaves – few
- Mint leaves – few
- Salt – 1 tsp
- Plain yoghurt – 1 tsp
- Curry leaves – few
- Kasuri Methi – 1/2 tsp (dried fenugreek leaves)
- Garam Masala – 1/2 tsp
- Fennel powder – 1/2 tsp
Preparation
Grind all the above ingredients into a fine paste.

Ingredients
- Chicken whole leg – 4 nos
- Lemon juice – 2 tbsp
- Turmeric powder – 1/2 tsp
- Red chilli powder – 1 to 2 tbsp
Preparation
Add the ground mix to the chicken. Add lemon juice,turmeric,chilly powders and salt as needed. Mix well and marinate for 30 minutes.

Ingredients
- Cooking oil deep frying (shallow fry can be done, try grilling too)
- Curry leaves – few
Preparation
Prepare a pan for frying. Add oil .Once hot place the chicken pieces. Add some curry leaves. Cook over low flame fry evenly. After cooking keep the pan tilted for a while, this will drain the excess oil. Can try deep frying or air frying too.
