Step 1 (To marinate the fish)
Ingredients
- Fish fillet – 250 gms (sole fish)
- Red chilli powder – 2 tbsp
- Turmeric powder – 1/4 tsp
- Ginger-garlic paste – 1 tsp
- Salt – as needed
- Malt vinegar – 1/2 tsp
Preparation
Fish fillet of river fishes are used for preparing the Amritsari fish fry. If you don’t get the river fishes, you can use any similar fishes. Mix all the above ingredients and marinate the fish for about 30 minutes. If malt vinegar is not available, it can be replaced with Lemon juice or white vinegar.
Step 2
Ingredients
- Garam masala powder – 1/2 tsp
- Besan (chickpea flour) – 2 tbsp
- Ajwain (Carom seeds) – 1/4 tsp
- Rice flour – 1 tsp
- Water – as needed (less than ½ cup)
Preparation
Add the above ingredients to the marinated fish. Sprinkle water and prepare a coating (thick paste consistency). Coat the marinated fish evenly. Leave the preparation for about 10 minutes.
Step 3
Ingredients
- Mustard Oil – for deep frying (can use any other oil for frying)
- Chat masala – 1 tbsp
Preparation
When the oil is hot, add few pieces of the fish fillets to it. Ensure that the pieces are not clustered in the pan while frying. Flip the pieces after 2 to 3 minutes. Then fry for 2 to 3 minutes and remove them. Then prepare the second batch of fish fillets. Then remove the second batch and add the first batch back into the hot oil (Double frying). Fry it till they turn crispy. Continue this double frying process for all fillets. Sprinkle chat masala and serve hot.
