Weight loss recipe – Horse gram – papaya subzi | muthira papaya thoran | Healthy vegetable mix

Step 1

Ingredients

  • Horse gram – 1 cup
  • Water – 5 cups
  • Salt – as needed

Preparation

Dry roast the horse gram till crispy. The colour will become darker also. Boil the roasted horse gram by adding water and salt as needed. After cooking, drain the water and save the water for making another recipes like soups, rasams etc…

Step 2

Ingredients

  • Fresh coconut – 1 cup (grated)
  • Garlic cloves – 2 nos
  • Red chilli powder – 1 ½ tsp
  • Turmeric powder – ½ tsp
  • Black pepper powder – 1 tsp

Preparation

Coarse grind all the above ingredients.

Ingredients

  • Coconut oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Dried red chilly – 3 nos
  • Curry leaves – few
  • Papaya (raw) – 1 medium sized (chopped into small thin pieces)
  • Salt – as needed

Preparation

Into a heated pan add oil. Once the oil is hot add mustard seeds. When the seeds start to pop add dried chilly and curry leaves. Now add the papaya and salt as needed. Saute for few minutes. Add the boiled horse gram (step 1) along with little water drained from it. Cover and cook over low flame. When papaya is cooked well, add the ground coconut mix (step 2) and mix well. Turn off the flame and cover it with lid and leave it for 5 to 10 minutes. This will help to retain the nutrients of the coconut. Its ready…have it with rice or roti…
