BIRIYANI MASALA -Preservative free masala
Ingredients
- Mace- 3 nos ( jaitipathri or jaivithri )
- Star anise – 4 nos ( thakolamm or chakr phool )
- Black pepper corns – 1 tbsp
- Cardamom -1 tbsp
- Cinnamon 1 pc,3”size
- Bay leaves – 8 pcs ( small ) { bigger leaves – use 4 }
- Dried red chilli – 10 nos
- Fennel seeds – 2 tbsp
- Shajeera – 2 tbsp ( shahi jeera/ black cumin )
- Cloves – 1 tbsp
- Coriander seeds – 2 tbsp
- Black cardamom – 3 nos
- Nutmeg – ½ ( jathikka )
Preparation
Dry roast shajeera till it pops. Dry roast coriander and fennel seeds till golden brown. Dry roast bay leaves and red chili till crispy (discard the burnt seeds of chilly if any). Dry roast star anise, mace, cardamom, nutmeg, black cardamom, cloves, black pepper and cinnamon stick. After cooling, grind to fine powder.Store in an air-thight container.
