Nadan Kozhi Kanthari Thoran Recipe (Chicken Stir-fry with Coconut and Bird’s eye chilli)
Kerala Chicken Thoran – for those who love the boneless chicken dishes… added with flavours of coconut and Bird’s eye chilli or kanthari muluku. Bird’s eye chilli helps in digestion, increases metabolism, assists in weight loss and believed to help with controlling cholesterol and BP levels. Thoran is a traditional Kerala dish, made using different vegetables and this recipe is its non-vegetarian variation. Kerala Chicken Thoran goes well with rice and other curries, but for sandwich lovers, this is an ideal filling. Make it as a roll for the children and they would crave for more and so can be made as part of their school tiffin as well.
Step 1
Ingredients
- Scraped fresh coconut – 1 cup
- Turmeric powder – 1/2 tsp
- Bird’s eye chilli (Kanthari) – 30 nos (Or as per taste)

Coarse grind all the ingredients together.

- Boneless chicken – 800 gms (or a full chicken)
- Water -3/4 cup
- Chilly powder – 1 tsp
- Turmeric powder – 1/2 tsp
- Salt – as needed
Preparation
Cook the chicken by adding all the other ingredients. You may leave little water in the chicken to keep the chicken moist. After cooling down, shred the chicken into small pieces. You can use hands, spatula or a masher to shred the chicken.

- Coconut oil – 2 to 3 tbsp
- Black pepper powder – 1 tsp
- Coriander powder – 1 tsp
- Fennel powder – 1 tsp
- Garam masala powder – 1 tsp
- Onion – 2 nos (finely chopped)
- Ginger garlic paste – 1 tbsp
- Mustard seeds – 1 tsp
- Dried red chilli – few
- Curry leaves – a handful
- Salt – as needed
Preparation
Heat a pan or a kadai. Add oil to it. When the oil is hot, add mustard seeds. Upon popping of mustard seeds, add dried red chillies, curry leaves and saute for a while. Now add ginger-garlic paste and saute for about 30 seconds. Then add chopped onion, a pinch of salt and saute till translucent. Adding a pinch of salt makes the process faster. Add the shredded chicken and mix well. Then add the ground coconut mix (step 1) and all the other spices. Add salt only if needed as we have added salt while cooking the chicken. Sprinkle little water, add some curry leaves and mix well. Cover and cook for about 5 minutes. Turn off the flame, add some more curry leaves and pour a tablespoon of coconut oil. Mix well and chicken thoran is ready to serve.
